Egg Salad Muffin Melt

Pre-heat oven at 350 degrees

Ingredients:
4 English muffins (sliced and toasted)
or
4 plain bagels (sliced and untoasted)
6 hard cooked eggs, chopped
1/2 cup mayo
1/4 teaspoon prepared mustard
2 tablespoons sweet relish (optional)
Salt & Pepper to taste
8 slices ham or Canadian bacon
1/2 cup shredded Cheddar cheese (sharp or mild)

Combine in medium size bowl: eggs, mayo, mustard, relish, salt & pepper. Blend well.

On each half of English muffin or bagel, place a slice of ham.

Top with some egg salad.

Top that with shredded cheese.

Place muffins/bagels on a greased cookie sheet.

Bake for 6-8 minutes or until the cheese is melted.

Quick & easy; Kids love this one.
