Light Pasta & Peppers

Ingredients:
1 lb. pasta (spaghetti, angel hair, egg noodles)
2 pkgs. Frozen leaf spinach, or, 1 pound fresh, cleaned spinach
6 sweet peppers (3 red, 3 green)
1/4 teaspoon garlic powder
salt & pepper to taste
Olive oil or Vegetable Oil
Grated Parmesan cheese

In a large pot, begin to cook the pasta. As the pasta cooks, core the peppers and cut into strips
In a large fry pan, saute peppers in oil and garlic powder until soft. Add spinach. Cover and cook until spinach has been reduced.

Drain cooked pasta. Combine and toss hot pasta, peppers and spinach.
Add salt, pepper and 2 tablespoons Parmesan cheese. Toss again. If more cheese is desired, add more cheese and toss again.

Serve hot as a main dish or side dish. Approximate cooking time: 20 minutes

Wonderful on hot summer days.
