Outrageous Mashed Potatoes

Ingredients:
4 Large Russet Potatoes (peeled & cubed small - approx. 1/2-inch cubes)
1/2 cup milk
1/2 cup cream cheese
2 tablespoons Butter
1 tsp. onion powder -- or -- 1/4 onion chopped very fine
1 tablespoon parsely (garnish)
Salt & pepper to taste

Boil potatoes until cooked.

When potatoes are almost cooked:
In sauce pan, over medium heat, allow milk, cream cheese, butter, onions, and salt and pepper to simmer until all is melted. Stir often.

After potatoes are cooked, drain well and turn potatoes into a large mixing bowl.

With a hand masher or electric mixer, mash the potatoes, add the milk and butter mixture a little at a time until all is combined. Mash potatoes until desired consistancy.
Turn into serving bowl and garnish with parsely. Serve hot with your favorite meat or chicken dish.

This is a great departure from normal mashed potatoes....absolutely delicious.

Any leftover mashed potatoes are also great at potatoe pancakes.
